This module is designed to give learners the opportunity to demonstrate the application of their learning and art at work through the completion of an illustrative and reflective work based portfolio.
Syllabus Summary
The learner’s illustrated portfolio should clearly reflect the learner’s development over the course of the programme. The portfolio should illustrate the development in the workplace of a defined number of creative culinary products. Learners will be required to reflect on the development of each product giving regard to: 1. Cost Price/ Sales Price 2. Viability 3. Added Value of Product to Enterprise 4. The commercial context in which the products will be produced and sold 5. Dietary requirements, health and safety, food safety and good work practice 6. Materials consideration 7. Specialised technology 8. Visual, textual and organoleptic aspects 9. Quality assurance mechanisms 10. Influencing decision makers to adopt products The portfolio will require learners to gain the opinions of industry supervisors and college mentors as an integral part of the recording and reflection process. N.B. Photographic evidence of each product at development stage and in completion is essential.
