Food Safety and Risk Analysis

This course provides an update on etiological agents in foodborne disease and the microbiological aspects of food safety. An in-depth study of microbiological risk analysis is also presented to include risk assessment, risk management and risk communication. The application of predictive microbiology to risk assessment and food safety will also be examined.

- Application of predictive microbiology in risk assessment
- Integration of predictive microbiology with HACCP and risk assessment to enhance food safety

Statements about the various types of learning and teaching methods that are used in the delivery of the module

The module will be delivered as a blended learning for more interaction via online along with the traditional place-based classroom methods including whiteboard, power point presentations, workshops and in-class room interactive activities like presentations, or formative assessments etc.  The module will also use the virtual learning environment supported by BrightSpace, including discussion boards will be used.

This module is 100%CA and will be assessed in three different assessment types and brief description on each assessment is given in the assessment type section. 

Guest lectures and/or videos will be combined with traditional classroom-based learning for this module to capture the changes in the food policies and contributing factors for foodborne disease and associated risk evaluation (risk analysis application along the food process).
