Advanced Food Technology

This module provides in-depth information on conventional and emerging food processing methods, newly developed food packaging systems, and the application of nanotechnology in the food industry. The module also covers a range of food processing technologies and their effect on food product attributes, such as bioactive compounds, safety, and sensory and nutritional aspects of the food upon processing. Process design and unit operations typically applied in the food and beverage industries will be introduced to the students.

This module aims at introducing students to the recent development in processing technologies applied in the food industry. Besides, food process design and unit operations applied to food and beverage will be discussed.

Food and beverage process design: General approach to food process design, Equipment types and sizes for unit operations and transfers, Develop process layout, Categories of food processes, Process control and instrumentation

Key unit operations in food and beverage Industries: Drying and dehydration, Refrigeration and freezing, Membrane separation, centrifugation and mixing, Evaporation and distillation

Electro-magnetic thermal processing technologies: Microwave, Radio Frequency, Ohmic heating and Infra-red heating

Emerging non-thermal processing technologies: High-pressure processing, Pulsed electric fields, Ultrasound in food processing, Non-thermal plasma, Ozone, Gamma, x-ray and electron beam (irradiation) processing, High-intensity pulsed light and 3D food printing

Advancement in Food and Beverage Packaging Systems: Influence of Packaging on Beverage, New Emerging Strategies: Material/Structural Modifications, Active and Intelligent Systems, Modified Atmospheric Packaging, Antioxidant active food packaging

Nanotechnology in the food and beverage Industries: Fundamentals of nanotechnology, Application of nanotechnology in the food industry, Nanosensors for Safe and Quality Foods, Nanocomposite Films for smart packaging.
