Project title: The influence of tourist perceptions of street food on their purchase intention in Vietnam
Project abstract: Street food has been a very important component of each nation’s tourism industry. Street food reflects the history and uniqueness of each local culture. This paper attempts to measure tourist perceptions of street food (authenticity, value and risk) in Hue city, Vietnam and their influence on tourist purchase intention. This study uses mixed method (in-depth interviews and questionnaire survey) to examine the relationship between perceived authenticity, perceived value, perceived risk and street food purchase intention in the pre decision making stage. This paper also measures the influence levels of perceived authenticity, perceived value and perceived risk towards street food purchase intention of tourists. This paper also provides some implications for street food planning and management.
