My research aims to help people manage and prevent certain diseases (e.g. heart disease and diabetes) by developing new food ingredients. It involves using natural by-products of food processing to create these new ingredients.

What societal groups do you aim to positively affect and support through collaborative research?

The general public, particularly people who are more likely to develop diseases such as diabetes and heart disease, such as older people.  

How might your involvement in engaged research support these groups?

Collaboration on research would help raise awareness of food choices and provide people with more options for healthy living and managing diseases. By developing these new ingredients (from natural by-products that would otherwise be discarded) I hope to make healthy eating more affordable.
