Michelle works very closely with Food Policy Ireland which advocates for equitable food systems that provide viable livelihoods for farmers and producers, and nourish people, communities and the planet. Her recent work has focused on creating a new model of school meal provision in Ireland.

A weekly writer for The Irish Examiner, Michelle's research projects have won RETHINK Ireland Social Innovation funding. Michelle founded acclaimed bakeries The Cake Café & Slice & established Our Table, a social enterprise supporting people living in direct provision. Michelle has used her expertise to inspire & motivate communities to grow their own food & promote food security through a climate action project entitled Our Shared Plate as well as Green Schools. Michelle’s extensive knowledge of sustainability also stems from the creation of events tackling climate change, such as Eat the Streets.
