Healthy Campus Cookbook Volume 2 Launch
TU Dublin celebrated the second publication of the Healthy Campus Cookbook at a launch event on the Grangegorman campus on 01 May, 2025.
The cookbook consists of 48 healthy and sustainable recipes submitted by students and staff at TU Dublin along with some guest contributors. The recipes were analysed for nutrition and emission content by third year students from the Human Nutrition & Dietetic Programme. Following the analysis of nutrition and emissions content, the recipes are given 'traffic' colour labels. This correlates to the food servings containing low, medium or high quantity of fat, saturated fat, sugar and salt. Similarly with a carbon footprint rating, a labelling system of 'A' indicates a very low carbon footprint to 'E', a very high carbon footprint.
Recipes included breakfast, lunch, dinner and desserts and as part of the competition, contributors were selected to receive a prize for:
- Best Nutritional Rating – Cian Ryan - Lentil Dahl
- Lowest Emission Scoring Per Serving – Tara McDonagh – Vegan Chickpea Curry
- Best Innovation for Food Waste – Kate Kobayashi Harford – Zero Waste Vegetarian Pho
- Best Food Photo - Agathy Chaaya – Crunchy Tuna Salad

Chef Gordon Carberry from Sodexo provided a live cookery demonstration of a recipe featured in the cookbook at the launch which was enjoyed by all attendees afterwards.
