Emmanuel Duah Osei Showcases Innovative Research on Brewer’s Spent Grain at TU Dublin MSc Brewing and Distillery Launch
Ing. Emmanuel Duah Osei, an ARISE PhD student in Food Science and Environmental Health at TU Dublin, presented his research at the MSc Brewing and Distilling Launch event. His poster focused on valorizing Brewer’s Spent Grain (BSG)—a major brewing by-product into bioactive fractions for sustainable applications in pet and farm animal nutrition.
Using green extraction techniques, Emmanuel presented the recovery of BSG bioactive fractions, including dietary fibre, phenolic compounds, and protein hydrolysates with improved techno-functionality and biological activities such as antioxidant, antidiabetic, anticancer, and antihypertensive properties. These bioactive fractions can potentially improve the nutrition and health status of pets and farm animals while supporting a circular economy. The launch event provided a valuable platform for Emmanuel to engage directly with researchers, industry stakeholders, and food innovators. His research aligns with TU Dublin’s mission to promote sustainable innovation and circular economy practices.
Supervised by Dr. Azza Silotry Naik and Dr. Gemma K. Kinsella, and Specialist Nutrition Company and Teagasc as industrial and research partners, Emmanuel’s ongoing work is set to yield innovative outcomes and provide practical solutions for a more resilient and sustainable agri-food system.
