Mark is an award winning Chef with over 30 years International restaurant experience. He completed his Doctoral thesis (ED) at Dublin City University in 2017, which focussed on education, using video modelling to teach culinary arts.
‘Cocoa shells & Broken biscuits’ is his first book which tells the story of the food culture of Dublin city’s Liberties market area. The new publication features the evolution of the Dublin Bird Market.
Mark has a keen interest in culinary arts training, mentoring and competition. He is a graduate of Hautes Etudes du Gout, World Chefs accredited Educator and International Judge.
